Happy Friday!

Today I added a blogroll with a list of a few of my favorite blogs.  It’s over on the right side of the screen.  When I’m looking for dinner ideas or maybe a tasty new cupcake, they never disappoint.

I’ve already shared this delicious soup from Pink Parsley and these fabulous hamburger rolls from Confections of a Foodie Bride.

Hamburger Rolls

Well, here it is Monday after another weekend has come and gone way too quickly. I can’t complain though, because it was a good weekend. We were able to enjoy some time out in the sunshine before secluding ourselves indoors for a Mad Men marathon in anticipation of the big season premiere. And we fired up the grill for burgers for the first time this season.

The first burgers of the season deserve their own homemade rolls, don’t you think?

These rolls are super simple to throw together a couple hours before burger time. You can dress them up to look fancy by sprinkling the tops with sesame seeds, poppy seeds, or (my favorite) minced onions. But they are delicious left alone, too.

Happy Friday!

  1. When it isn’t summer and I don’t have buckets of basil growing on the back deck, this basil paste in a tube is fantastic for adding a little something to a variety of dishes.  I like to squirt it into canned tomato soup when I haven’t made this one from scratch, and it boosts the flavor in just about any pasta.  (photo from gourmetgarden.com)
  2. My sister got me to try her fave, and now it’s one of mine.  Applying it to your hair to make it smooth and shiny is just one of the many uses of coconut oil.  Google it.  (photo from amazon.com)
  3. I didn’t get around to watching SMASH when it first came out, but thanks to hulu.com, I’m getting into it.  I think if you enjoy watching musical theatre, you’d get into it, too.  (clip art from nbc.com)

Creamy Tomato-Basil Soup

During the cold winter months, we have some kind of soup for dinner at least once a week.  It might be from a can and doctored up with a little of this and that, or it might be something a little more homemade, like this.  Either way, it’s nice to come home after a long day and throw some simple ingredients in a pot, and then sit down to relax while it simmers.

As the weather warms up, we gradually forget about soup and move on to anything that can be grilled.  It may be time to fire up that grill soon, but around these parts, I’m certain there will be an opportunity for at least one more pot of soup.

If you’re looking for one more pot of soup to enjoy before the weather gets warm, this would be a good choice.  It’s quick and easy to put together, and goes well with bread left over from the weekend, or a panini with some focaccia from the freezer.

Chocolate Whoopie Pies with Salted Dulce de Leche Frosting

Happy Friday!  I don’t have a list of Friday faves today.  I’ve wanted to share this recipe for a week, but I’ve spent much of the week fighting with my computer.  Call me crazy, but I feel like power struggles with electronic devices should be won by the human.  I’m learning that it’s not always the case.  Oh well.

 Are you familiar with whoopie pies?  I’m sure you are.  Though their name suggests it, they have nothing to do with pie.  Many thought these hand-held desserts that look like a cookie and taste like cake would become the “new cupcake.”  While I don’t think anything will take the place of cupcakes, I do think you should give these a try. 

 When I spotted the recipe for chocolate whoopie pies in One Girl Cookies, I thought they looked like a pretty good treat to take to work.  Since whoopie pies are made with two soft cookies sandwiched together with frosting, they are perfect for taking along places.  You can pile them into a container and not worry about them moving around and losing their frosting.  In the book, the cookies were paired with peppermint frosting.  I’m sure they would have been good, but the dulce de leche frosting with the preceding recipe caught my attention.  I can tell you right now that I was very pleased with this substitution.  When I tried the frosting, I was pretty sure that I wanted to eat it out of a bowl for dinner.  It was that good.

Friday Faves

Happy Friday!1.  My favorite way to add some whole grain goodness to recipes without making them too heavy.  Whole wheat pastry flour has less protein and gluten than regular whole wheat flour, so you can still get a light texture in cookies and breads.  (photo from shopwell.com)

2.  Using this weekly conditioner from Neutrogena is my favorite way to put moisture back in my hair.  It’s great.  (photo from Amazon.com)

3.  Crystal Light came out with on-the-go packets that actually have caffeine, for those of us who would like a little more oomph than B vitamins.  I’ve tried peach-mango and citrus (basically lemonade), and I like them both.  (photo from caloriecount.about.com)
